Ok this is one funny salad. I didn’t plan to put this on the blog. But after I pull out the Jackson Pollock with the Raspberry Coulis I felt so artistic and the plate instant puts a smile on my face. The vibrant colors of the Raspberry dressing and the bright green of the Romaine Lettuce and the healthy ingredients are just simply irresistible. To me, food has to taste AND look pretty at the same time. I mean, that’s the whole point of having this blog, so I get to share the most wholesome healthy homemade meals with you. So for this salad I use uncommon ingredients, at least for Jakarta standards. In Western parts of the world they are easy to get your hands on in regular supermarkets, fresh Buffalo Mozzarella and dried cured ham like Prosciutto. Both of them I got from my home town Amsterdam! Whenever relatives or friends are visiting me from The Netherlands, they need to bring me some goodies. It’s a must. Otherwise we can’t be friends anymore. Sometimes I do get frustrated over silly things like, not finding the right ingredients in supermarkets in Jakarta. Simply as it is unknown or not a common ingredient, surely things are getting available, one step at the time. But then again, to put things in perspective, now during the rainy, cold and dark Fall season in Europe, I can soak in my daily vitamin D from the hot sun rays in Indonesia and can live in between luscious palm trees and drink my fresh coconut juice around the corner. I guess the lesson here is to be grateful in every aspect in life and to enjoy to the fullest right now, right here where you are. Enjoy this God given day friends.

Mozzarella Prosciutto Salad

Serves 1 large portion or 2 side salads

  • 1 Buffalo Mozzarella, making big chunks using your hands
  • 4-6 slices of Prosciutto or any other dried cured ham
  • 1 head of Romaine lettuce, leaves apart
  • 6 cherry tomatoes, cut in half
  • 1/4 cucumber, diagonal sliced

Raspberry Coulis

  • 1 cup of fresh or frozen raspberries
  • 1 tablespoon of virgin olive oil
  • 1 tablespoon of water
  • 1/2 of lemon juice and zest
  • salt and pepper to taste
  • 1 teaspoon of agave or maple syrup

Wash the Romaine lettuce and tear the leaves one by one apart and divide unto 1 big plate or 2 smaller plates. Depending on how many portions you want to serve. Cut the cherry tomatoes in halves, slice the cucumber diagonal, tear the mozzarella in big chunks and add all on top of the lettuce. Wrap the prosciutto ham randomly and place on top of the rest of the salad. Last but not least make your raspberry coulis dressing. Put all ingredients in a blender and blend until smooth. When ready pull a Jackson Pollock and start decorating and dressing the plate(s). Have fun!
