I’m so fortunate to live in this part of the world: South East Asia! I’m born and raised in The Netherlands and moved to Indonesia in 2013. Our tastebuds had quite a ride since then. Food is much more flavorful on this side of the planet. Often time there are lots of fresh herbs and spices involved in the meals. Think of ginger, turmeric, lemongrass, coriander, chillies, cloves, curry, coconut in all kinds of varieties. Speaking of coconuts. I discovered that you can literally eat the whole fruit! The juice, the peel, the meat. They come as coconut sugar, coconut oil, shredded dry coconut, coconut milk, coconut butter, coconut yogurt, coconut juice, coconut flakes, coconut cream. The list is endless. Really. Same goes for the benefits when eating coconut. The natural saturated fats increase the healthy cholesterol in your body and at the same time convert the bad cholesterol into good. It’s like magic. By increasing the good cholesetrol which goes by the medical name (HDL) it lowers the risk of heart disease. Bring me some coconuts now!
Lucky me these healthy superfoods grow everywhere in the region. They are cheap, healthy, delicious and versatile. Yay! In today’s recipe I combine coconut juice and meat with another ancient superfood Goji berry. Today they are available almost in all supermarkets at the health section, but originally they grow in China. Goji berries are high in antioxidants, improve immune functions, promote a healthy skin and detoxify the liver just to name a few benefits from this superfood. This recipe is super easy to whip with only 4 ingredients you have yourself a power drink. Let’s go!
- 2 cups coconut water
- 1 cup fresh coconut meat
- ⅓ cup soaked goji berries incl. water
- 1 cup fresh kale (stalks discharged) or spinach
- Soak goji berries overnight or at least 20 min.
- Wash kale and dischared the stalks (these are bitter) or spinach
- Blend everything until smooth in blender.
