Easy Tropical Smoothie Bowls

Originally from the Netherlands, this moment of the year would be a very depressing month in Amsterdam. The transition phase from Fall to Winter results in cold, rainy, windy, dark, perhaps also snowy days.  You wake up in the morning in darkness, you come home from work or school in darkness. It was always a tough time for me personally.

I remember vividly, during office hours, I would dream of sunny destinations and could feel my sandy toes on the beach. Only to be woken up by my boss who said I had to stop dreaming and get back to reality. The truth was, I didn’t like my reality. I didn’t like my life back then. I felt that there was so much more to explore and learn outside the life I knew. Does this sound familiar to you? If not, that’s also ok 😉

Whenever I hit rock bottom and was feeling really down and isolated because of the Winter dip, Andrew and I would book a last-minute holiday to the sun. We then had a big need for vitamin D, vitamin Sea, walking on slippers and feeling the sweat on our skin.

I’m glad that I can share with you that today’s reality is that we have not been living in the Netherlands for 4 years now. It is exactly 4 years ago that we left with our son Rocco, then only 1.5 years, to Indonesia. Yes, we took the well-known leap of faith, and thank God never regretted this decision!

Our daily life is 30 degrees throughout the year, surrounded by palm trees, sea, and a soul community where I can no longer live without. With this recipe, I want to give you a bit of my reality: Easy Tropical Smoothie Bowl! I hope you feel the warmth, love, and sun by eating this bowl. Easy Tropical Smoothie Bowls

Ingredients

  • 1 cup of frozen mangos, chopped
  • 2 frozen bananas
  • 1 cup of frozen pineapple or papaya, chopped
  • 1/3 cup of plant-based milk or more if needed (nut, soy, hemp, oat, rice)
  • Toppings: granola of choice, passion fruit, cubed mango, unsweetened coconut flakes.

Instructions

  1. Mix all ingredients except for toppings in a food processor or high-speed blender.
  2. Pour into bowls and add toppings of your choice. Enjoy immediately!
